In a pan, heat the butter until it foams, add the sweet potato slices and cook, turning constantly. Peel the pineapple and remove the woody stalk, then cut the flesh into small cubes. Add the pineapple cubes to the sweet potatoes. Season the mixture with pepper, salt, sugar and cinnamon, and add a little water. Allow everything to simmer in a pan over a low heat for approx. 15 minutes, adding water when necessary. Dice the ham, add to the sweet potato and pineapple mixture and warm through.
