Texas Jalapeño Onion Rings Recipe

These fiery onion rings go with any barbecued or grilled dish from Chapter 10, or you can serve them in place of french fries to spice up a hamburger plate. Ingredients :
  • 5 jalapeño chiles, stems and seeds removed, chopped
  • 12 ounces (336 mL) beer, at room temperature
  • 3 large onions, peeled and sliced in 1/4-inch (.5 cm) thick rings, separated
  • 11/3 cups (315 mL) all-purpose flour
  • 1 egg, beaten
  • Vegetable oil for frying
Method :
  1. In a blender, combine the chiles with a little of the beer and purée.
  2. In a bowl, combine the puréed chiles, remaining beer, onions, flour, and egg.
  3. Pour about 1 to 11/2 inches (2.5 to 3.5 cm) of oil in a skillet and heat it to 350°F (180°C).
  4. Dip the rings in the batter and drain the excess. Fry them in the oil until golden brown and transfer to paper towels to drain.
