Coconut Cookies Recipe

Adding flaked coconut to the rich dough adds texture as well as flavor to these melt-in-your-mouth gems. Prep : 20 minutes Bake : 15 minutes per batch
  • 23/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter or margarine (2 sticks), softened
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 11/2 cups flaked sweetened coconut
  1. Preheat oven to 325°F. In medium bowl, with wire whisk, stir flour, baking powder, and salt.
  2. In large bowl, with mixer at medium speed, beat butter and sugar until light and fluffy. Beat in egg, milk, and vanilla. Reduce speed to low; beat in flour mixture just until blended. Stir in coconut (dough will be crumbly).With hands, press dough together.
  3. Drop dough by rounded teaspoons, 2 inches apart, on two ungreased cookie sheets. With fork, press crosshatch into each cookie, flattening to 1/4-inch thickness. Bake until edges are lightly browned, 15 to 17 minutes, rotating cookie sheets between upper and lower oven racks halfway through baking. With wide spatula, transfer cookies to wire racks to cool.
  4. Repeat shaping and baking with remaining dough. Makes about 72 cookies.
