Good Housekeeping's Fudgy Brownies Recipe

Ultrarich with lots of deep, dark chocolate flavor, these brownies are fabulous with or without our praline icing. For a moist, fudgy texture, do not overbake. Prep : 10 minutes Bake : 30 minutes
  • 11/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/cup butter or margarine (1½ sticks)
  • 4 squares (4 ounces) unsweetened chocolate, chopped
  • 4 squares (4 ounces) semisweet chocolate, chopped
  • 2 cups sugar
  • 1 tablespoon vanilla extract
  • 5 large eggs, beaten
  1. Preheat oven to 350°F. Grease 13" by 9" baking pan. In small bowl, with wire whisk, stir flour and salt.
  2. In heavy 4-quart saucepan, melt butter and unsweetened and semisweet chocolates over low heat, stirring frequently, until smooth. Remove from heat. With wooden spoon, stir in sugar and vanilla. Add eggs; stir until well mixed. Stir flour mixture into chocolate mixture just until blended. Spread batter evenly in prepared pan.
  3. Bake until toothpick inserted 1 inch from edge comes out clean, about 30 minutes. Cool completely in pan on wire rack. When cool, cut lengthwise into 4 strips, then cut each strip crosswise into 6 pieces. Makes 24 brownies.
Each brownie : About 206 calories, 3g protein, 26g carbohydrate, 11g total fat (6g saturated), 60mg cholesterol, 121mg sodium.

PRALINE-ICED BROWNIES

Prepare brownies as directed; cool. In 2-quart saucepan, heat 5 tablespoons butter or margarine and 1/cup packed brown sugar over medium-low heat until mixture has melted and bubbles, about 5 minutes. Remove from heat. With wire whisk, beat in 3 tablespoons bourbon or 1 tablespoon vanilla extract plus 2 tablespoons water; stir in 2 cups confectioners’ sugar until smooth. With small metal spatula, spread topping over room-temperature brownies; sprinkle 1/2 cup pecans, toasted and coarsely chopped, evenly over topping. Cut brownies lengthwise into 8 strips, then cut each strip crosswise into 8 pieces. Makes 64 brownies.
