  • 1/2 cup dark seedless raisins
  • 3 tablespoons dark rum or bourbon
  • 1/2 cup sugar
  • 1/teaspoon ground cinnamon
  • 1/teaspoon ground nutmeg
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups milk
  • 3 cups day-old French bread cubes (1/2 inch)
  1. In cup, combine raisins and rum; let stand 15 minutes. Grease 8" by 8" glass or ceramic baking dish.
  2. In large bowl, whisk sugar, cinnamon, and nutmeg. Whisk in eggs and vanilla until combined. Add milk to egg mixture and whisk until well blended. Stir in bread cubes. Let stand 15 minutes, stirring occasionally. Stir in raisin mixture.
  3. Preheat oven to 325°F. Pour bread mixture inTo Prepared dish. Bake 45 to 50 minutes, or until a knife inserted near center of pudding comes out clean. Let cool on wire rack. Serve warm or refrigerate and serve cold. Makes 8 servings.
