This tangy French-style tart can be served on its own or accented with fresh berries. Be sure to make a high pastry rim to contain all the delicious filling. Prep : 25 minutes plus chilling and cooling Bake : 50 minutes
  • Pastry for 9-Inch Tart
  • 4 to 6 lemons
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/cup heavy or whipping cream
  • confectioners’ sugar
  1. Prepare pastry dough as directed through chilling.
  2. Preheat oven to 425°F. Use dough to line 9-inch tart pan with removable bottom; press dough up side so it extends 1/inch above rim of pan. Refrigerate or freeze until firm, 10 to 15 minutes.
  3. Line tart shell with foil; fill with pie weights or dry beans. Bake 15 minutes. Remove foil with weights; bake until golden, 5 to 10 minutes longer. If shell puffs up during baking, gently press it down with back of spoon. Cool tart shell in pan on wire rack. Turn oven control to 350°F.
  4. From lemons, grate 1½ teaspoons peel and squeeze 2/cup juice. In medium bowl, with wire whisk, beat eggs, granulated sugar, and lemon peel and juice until well combined. Whisk in cream.
  5. Carefully pour lemon filling into cooled tart shell. Place tart on foil-lined cookie sheet to catch any overflow during baking. Bake until filling is set but center still jiggles slightly, about 30 minutes. Cool completely on wire rack. Just before serving, dust with confectioners’ sugar. Makes 8 servings.
