This southern classic couldn’t be any richer or more delicious. Prep : 25 minutes plus chilling and cooling Bake : 1 hour 5 minutes
  • Pastry Dough for 1-Crust Pie
  • 13/4 cups pecan halves (7 ounces)
  • 3/cup dark corn syrup
  • 1/2 cup packed brown sugar
  • 4 tablespoons butter or margarine, melted
  • 1 teaspoon vanilla extract
  • 3 large eggs
  1. Prepare pastry dough as directed through chilling.
  2. Preheat oven to 425°F. Use dough to line 9-inch pie plate; make decorative edge. Refrigerate or freeze until firm, 10 to 15 minutes.
  3. Line pie shell with foil; fill with pie weights or dry beans. Bake 15 minutes. Remove foil with weights; bake until golden, 5 to 10 minutes longer. If shell puffs up during baking, gently press it down with back of spoon. Cool on wire rack. Turn oven control to 350°F.
  4. Coarsely chop 1 cup pecans. In large bowl, with wire whisk, mix corn syrup, brown sugar, melted butter, vanilla, and eggs until blended. Stir in chopped pecans and remaining 3/cup pecan halves.
  5. Pour pecan filling into cooled pie shell. Bake until filling is set around edges but center jiggles slightly, 45 to 50 minutes. Cool on wire rack at least 1 hour for easier slicing. Makes 12 servings.
Each serving : About 353 calories, 4g protein, 38g carbohydrate, 22g total fat (7g saturated), 74mg cholesterol, 177mg sodium.

CHOCOLATE PECAN PIE
